Why Bone Broth?

I am starting with the easiest and one of the least controversial topics of real food, and that is BONE BROTH.  I usually have a big pot of bone broth simmering on the stove.  It is the first thing anyone in the house gets as soon as there is a sniffle or a sign that any illness may be coming on.

Bone broth used to be a staple in all homes…before canned soups came into the picture.  Now, many broths that we consume contain large amounts of MSG, preservatives, flavorings, and very little nutrition.  Making your own broth is easy and there are many health benefits to it.   A very detailed article breaking down the minerals and benefits of broth is here.  http://www.townsendletter.com/FebMarch2005/broth0205.htm

Here is my quick summary and why I consume it:

First of all, many people are taking the supplements glucosamine and chondroitin to keep their joints healthy.   Bone broths contain both of these in natural form.

Bone broth also contains collagen…yep, the stuff that makes your skin, hair and nails strong and healthy looking.   Collagen is also helps your ligaments, cartilage and brain.

Bone broths contain trace minerals, as well as calcium and magnesium…important minerals that are lacking in our diets today due to the soil depletion and the consumption of processed foods.

Bone broths also supply natural gelatin to the diet…this helps our bones, muscles and tendons.

Bone broth is delicious, easy and cheap to make.    Try to consume some daily…especially if you are having any difficulty with digestion, joints, muscles, hair, skin, nails, or the flu!

Home Made Bone Broth: 

  • One large organic, free range chicken or two small
  • Giblets
  • Chicken feet, optional (ask your farmer or butcher) The feet will make the broth more gelatinous
  • Two carrots
  • Two heads of celery
  • One onion, studded with cloves
  • One tablespoon of apple cider vinegar

Put all ingredients into a large stock pot.  Cover with filtered water.  Add a tablespoon of apple cider vinegar and let sit for one hour.  This helps the minerals leach out of the bones.

Bring to a boil.  Skim the scum off the top with a ladle.

Turn the stove down to low and simmer the broth for 24 hours.

Strain everything out.  Discard the vegetables.  You can use the chicken in salads or back in the soup

Put back in pot, bring to another boil, skim, add seasonings such as salt and pepper to your taste and enjoy.

This can be consumed on it’s own, or as a base for other soups.  I like to drink some in a mug every day with a tablespoon of coconut oil melted into it and some Celtic Sea Salt.  It makes a great breakfast on the go.
